Ingredients to make Cuban Fish Croquettes:
• Any white mass (sea) fish one pound or more
• Onion
• Garlic
• Bell pepper
• Laurel
• Parsley
• Bay leaf
• Nutmeg
• Oil
• Eggs
• Bread crumbs
• Flour
• Milk
How to make Cuban Fish Croquettes:
Fillet the fish and make sure there are no bones left (uncooked) in a pan over medium heat add a little olive oil or butter, about two crushed garlic cloves, very fine onion, a very fine roasted pepper almost mashed, salt pepper, a little cumin to taste (toast it before) and already, add the fish and crumble it with the ladle or the wooden palette! Reserve!
In another casserole a little butter, and flour let’s say a cup, toast it and then little by little the milk and nutmeg! A little bit of salt fence a béchamel of that. It will be a firm and rather dry dough. Add minced parsley if you want. Mix this with the fish. Must be dry!
Make the croquettes of this dough in the form of 4 cm tuberos or little balls. Pass them through egg and ground cookie. With very hot oil fry them.
