Cuban Creole Black Bean Stew Recipe

Ingredients to make Cuban Creole Black Bean Stew:

  • 1 pound of black beans
  • 1 liter of water
  • 1 Red or Green Pepper
  • 1 bay leaf
  • 4 Cloves of Garlic
  • 1 White Onion
  • 1/2 Pound of Pork Fat (Empellitas)
  • 4 teaspoons of olive oil
  • 1 tablespoon cumin

How to make Cuban Creole Black Bean Stew:

  1. Soak the beans for 24 hours in a container with cold water. Drain, rinse and cook the beans. When they have cooled, blend them.
  2. Add the vegetables, when they are about to cook, covering and let them cook for about 10-15 minutes, until they are tender.
  3. In a frying pan, make a sauce with three tablespoons of oil, the peeled and laminated garlic, the finely chopped onion, the pepper cut into pieces and leave it until golden brown, add a tablespoon of the sweet paprika with the pan off the heat, we reserve.
  4. Remove the stew from the heat, pour the sauce with the vegetables, and let it cook another 5 minutes, so that it takes on flavor.
  5. Remove from heat, correct salt and serve hot.
