Ingredients to make Crispy Noodles:
- 1 package of Noodles or Thin Pasta
- 2 cups of vegetable oil
- 250 grams of Peeled Prawns
- 1 handful of defatted pork strips
- 1 tablespoon red bean sauce
- 2 tablespoons of fish sauce
- 2 dessert spoons of Sugar
- 1 unit of beaten egg
- 1 tablespoon of chopped onion
- 1 tablespoon Corianth leaves
- 1 teaspoon lemon rind
- 1 teaspoon minced garlic
- 1 unit of Chilli
- 1 pinch of Salt and Pepper
How to make Crispy Noodles:
- Heat the oil in a deep frying pan and when very hot, fry the noodles until crisp and golden.
- Once fried, put them on paper napkins to absorb the oil.
- Let’s cool
- In another pan, heat 3 tablespoons of the excess oil and fry the minced garlic.
- Add the pork and prawns and cook over low heat for a few minutes.
- Add the red bean sauce, sugar and fish sauce.
- Add the beaten egg.
- When the latter is almost done, add the crispy noodles and mix everything together.
- Remove from the heat and sprinkle with the grated lemon peel, the onion, the split coriander leaves and the chili pepper cut into thin strips.
