The crepes in this recipe are different from those we normally know as they are made with corn flour. These gluten-free crepes are suitable for people with celiac disease and, furthermore, it is a very healthy dish because it contains few calories and the vegetables in the salad that we will use as a filling are full of nutrients and vitamins.
Ingredients to make crepes with salad:
- 100 grams of corn flour
- 1 cup of milk (240 milliliters)
- 1 unit of Eggs
- 1 unit of Carrot
- 1 bunch of lettuce
- 1 unit of Cucumber
- 1 unit of Tomato
- 80 grams of Mushrooms
- 50 milliliters of olive oil
- 2 tablespoons balsamic vinegar
- 1 pinch of salt
- 1 pinch of pepper
How to make crepes with salad:
1 Before making this healthy recipe, the first step is to get all the ingredients ready.
2 To prepare the dough for the gluten-free crepes, mix the egg, milk, corn flour and a pinch of salt in a bowl, mix everything very well, until you get a homogeneous mixture.
3 In a nonstick pan, add a splash of oil and add a little of the mixture. Distribute very well, forming a circle and cook the salty crepes over low heat for two minutes on each side.
4 For the salad, mix the finely chopped lettuce, the tomato cut into strips without seeds, the peeled and grated carrot, the cucumbers peeled without seeds and cut into half-moons and the sliced mushrooms.
5 Dress the salad with the balsamic vinegar, olive oil, salt and pepper, mix everything very well, and if you wish add a pinch of sugar to level the acidity of the vinegar. If you prefer you can also use any of these dressings:
