Ingredients to make cream of spinach with cheese:

  • 300 grams of fresh spinach
  • 1 liter of whole milk
  • 2 tablespoons of wheat flour
  • 5 little cheeses
  • 3 tablespoons of olive oil
  • 1 onion
  • 1 pinch of salt and pepper
  • 1 pinch of Nutmeg

How to make cream of spinach with cheese:

  1. We start by poaching the onion, previously chopped, in a pot with hot oil. Season with salt and when the onion is poached, but keeping its white color, add the flour and stir everything for a few minutes.
  2. Then it’s time to add the milk, we will do this little by little and without stopping stirring the fried onion. In this way we will prevent the flour from forming lumps in our spinach cream.
  3. When you finish pouring the milk, add the fresh spinach and keep cooking for about 10 minutes.
  4. To finish and give our recipe with spinach a soft and creamy touch, we add the cheeses in portions. Stir everything and blend with the help of a hand blender or in a blender.
  5. Return the cream to the pot, already smooth and homogeneous, and season to taste with salt, pepper and nutmeg.
