Cream of onion recipe for 4 people

Ingredients to make Onion Cream for 4 people:

  • 4 units of big-headed onions for the cream
  • 1 unit of big-headed onion to remove onion rings
  • 1 clove garlic
  • 1½ liters of milk
  • 2 tablespoons of Butter
  • 3 tablespoons of flour
  • 1 cup of Fund or vegetable broth c / n
  • 1 lurel leaf
  • 1 sprig of thyme
  • 1 can of milk cream
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of Nutmeg

How to make Onion Cream for 4 people:

  1. In a frying pan, sauté the cored garlic and the 3 onions chopped into julienne strips until they are transparent, it has to be over low heat so that the ingredients do not burn and they sweat their bitterness;
  2. Then we will continue making this rich onion cream for 4 people by adding this sauce to the blender with a glass of broth and process very carefully starting with gentle touches to prevent the lid from coming off due to the steam.
  3. In a saucepan, prepare the béchamel sauce: melt the butter over low heat, add the flour until it becomes a dough (roux), and then gradually add the milk and mix to remove the lumps until a semi-thick sauce remains. And add a pinch of nutmeg.
  4. Add the liquefied onions passed through a strainer to the saucepan where the béchamel is and mix over low heat, add the bay leaf and the sprig of thyme for one or two minutes and then remove them, leave to obtain the consistency of a cream and add a little milk cream, salt and pepper.
  5. The decoration of the cream of onions is very important and to make it we must remove the onion rings and reserve, prepare tempura with water, wheat flour and a pinch of salt and mix, it has to be thick but liquid at the same time; pass the onion rings through tempura and fry with the oil at 150 degrees centigrade or at a medium temperature, remove and place them on absorbent paper. You can also add a little cheese or mint to the cream decoration.
