Cream of lettuce recipe with peas as a garnish

Ingredients to make Lettuce Cream with Garnish Peas:

  • 1 lettuce
  • 1 onion
  • 1 leek
  • 50 grams of spinach
  • 1 liter of water
  • 100 grams of frozen peas
  • 8 tablespoons olive oil
  • 12 pitted black olives
  • 4 canned white asparagus tips
  • Salt
  • Pepper

How to make Cream of Lettuce with Garnish Peas:

  1. We wash the spinach, the lettuce and the leek and coarsely chop all these vegetables.
  2. Heat the olive oil in a saucepan and fry the peeled and julienned onion (thin strips) in it.
  3. When the onion is transparent, add the lettuce, leek and spinach.
  4. Sauté for 2 minutes and moisten with 1 liter of water. Cook gently and continue for 20 minutes. Add a little salt and pepper.
  5. Crush with the help of a blender until you get a fine and uniform cream.
  6. Thaw the peas at room temperature.
  7. If the cream is too thick, you can add a little milk or water.
  8. At the time of serving, we accompany each dish with raw but thawed peas.
  9. A tip of canned white asparagus and a few pieces of pitted black olives.
  10. At the time of serving at the table, a trickle of extra virgin olive oil is added.
