Cream of broccoli and carrot recipe

Broccoli and carrot cream is a healthy, nutritious and very low-calorie dish, since we are going to prepare it with water instead of milk. Likewise, it is a recipe that lends itself to multiple variations, being able to make cream of broccoli, carrot and leek, cream of broccoli and carrot with potato or cream of broccoli, carrot and onion, for example.

Ingredients to make Cream of broccoli and carrot:

  • 1 broccoli
  • 2 carrots
  • 1 zucchini
  • 1 leek
  • ½ bunch of Swiss chard
  • 1 pinch of salt
  • 1 splash of olive oil
  • 1 liter of water

How to make Cream of Broccoli and Carrot:

  1. Wash and cut all the vegetables. Pour the liter of water into the pot and add the leek, peeled carrot and courgette. If you want your broccoli and carrot cream to have more carrot flavor, add 3 or 4 pieces instead of 2. Likewise, you can substitute the zucchini for 2 potatoes or use half a zucchini and 1 potato.
  2. Add the chard and broccoli, as well as salt to taste and a splash of oil. Remember to remove the transparent filaments from the chard so that the cream is homogeneous. And if you prefer not to add this ingredient, you can eliminate it directly from the recipe or substitute it with spinach.
  3. Tip: You can add more water if you want, because even if you don’t use all the liquid later, you will have a delicious vegetable broth.
  4. Cover the pot and count about 15 minutes of cooking in a fast pot and about 30 minutes in a normal pot, in both cases over medium-low heat. After the time, remove the vegetables with a slotted spoon to place them in another container.
  5. Trick: If you make the broccoli and carrot cream in an express pot, remove all the steam before opening it.
  6. Add half of the broth and blend with an electric hand mixer. You can also puree the vegetables in the blender. The remaining broth will be a purifying and delicious vegetable broth, so you can reserve it to drink it hot and purify your body or to make other recipes with it. If you want, you can use 2 liters of water instead of 1 to obtain a larger amount of broth.
  7. Trick: If you want the cream to be more liquid, add more broth but always little by little.
  8. You can serve the cream of broccoli and carrot hot or cold. As you can see, this cream of broccoli and carrot without milk is light, healthy and very good. The carrot provides extra softness and flavor to the cream, just like broccoli and zucchini. However, remember that you can adapt the ingredients to your liking. By modifying the quantities or the foods you add, the color of the cream will change. For example, if you use more green vegetables, as in our case, the color will be more greenish, while if you add more carrot, the color will tend to be more orange.
