Cream Leek Soup Recipe

Ingredients to make Cream Leek Soup:

  • 30ml of white wine
  • Olive oil
  • 6 leeks
  • 2 potatoes
  • 1 onion
  • 700 ml. milk
  • 20 grams of butter
  • Pepper
  • Water
  • Salt

How to make Cream Leek Soup:

  1. In a saucepan with a splash of olive oil and the indicated amount of butter, we are going to fry the onion and the leeks.
  2. Once the leek cream has been fried, add a splash of white wine and, over high heat, let it evaporate.
  3. Then we will lower the heat and add the diced legs.
  4. Immediately afterwards, we will cover the sofrito of the leek cream with water, and we will cook for about 8 minutes, until the potatoes are well cooked.
  5. Crush the contents of the leek cream casserole with a blender.
  6. The fundamental touch will be given to the cream with the milk and the cream.
  7. Finally, we will rectify salt and pepper, and stir well before serving.
