Crayfish with tarragon recipe

Ingredients to make Norway lobster with tarragon:

  • 16 medium scampi
  • 1 medium onion peeled and finely chopped
  • 1 glass of brandy
  • 3 tablespoons olive oil, a few sprigs of fresh tarragon
  • Salt
  • Pepper

How to make Norway lobster with tarragon:

  1. Remove the heads of the scampi, peel them carefully and cut them in half, lengthwise.
  2. Heat the oil in a frying pan over the heat and fry the finely chopped onion together with the previously washed and dried tarragon, for a few minutes or until the onion is transparent.
  3. Add the halved langoustine tails, pour over the brandy and flambé.
  4. Season the preparation with salt and pepper, bring to a boil and serve immediately.
