Ingredients to make crab soup:
- ¼ cup of butter
- 1 large onion, cut into thin slices
- 500 grams of ripe tomatoes, peeled
- 3 ¾ cups chicken broth
- 1 sprig of thyme
- 1 large can corn kernels, drained
- 500 grams of crab meat
- A few drops of Tabasco sauce
- Chinese parsley or fresh parsley, chopped, for garnish
- freshly ground black pepper
- Salt
How to make crab soup:
- Melt the butter in a saucepan and fry the onion.
- Add the tomatoes, cover and cook over low heat for 10 minutes
- Stir in broth, thyme, corn kernels, crab meat, Tabasco sauce, salt and pepper to taste.
- Cover the saucepan and cook over low heat for 5 minutes, pouring into a tureen or individual soup bowls and sprinkle with the Chinese parsley or fresh parsley.
