Crab Soup Recipe

Ingredients to make crab soup:

  • ¼ cup of butter
  • 1 large onion, cut into thin slices
  • 500 grams of ripe tomatoes, peeled
  • 3 ¾ cups chicken broth
  • 1 sprig of thyme
  • 1 large can corn kernels, drained
  • 500 grams of crab meat
  • A few drops of Tabasco sauce
  • Chinese parsley or fresh parsley, chopped, for garnish
  • freshly ground black pepper
  • Salt

How to make crab soup:

  1. Melt the butter in a saucepan and fry the onion.
  2. Add the tomatoes, cover and cook over low heat for 10 minutes
  3. Stir in broth, thyme, corn kernels, crab meat, Tabasco sauce, salt and pepper to taste.
  4. Cover the saucepan and cook over low heat for 5 minutes, pouring into a tureen or individual soup bowls and sprinkle with the Chinese parsley or fresh parsley.
