Crab Salpicon recipe

Ingredients to make Crab Salpicon:

  • 3 pounds of clean crab meat
  • 3/4 cup olive oil
  • 6 tablespoons of butter
  • 6 garlic cloves, minced
  • 2 white onions, chopped
  • 4 canned jalapeno peppers, chopped
  • 1/2 cup of caldillo from the canned chili peppers
  • 1/3 cup chopped drained carrots
  • 4 medium tomatoes, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • Salt
  • pepper to taste

How to make Crab Salpicon:

  1. HEAT the oil and butter in a skillet and sauté the onions and garlic cloves.
  2. ADD all the remaining ingredients, except the crab meat.
  3. Season with salt and pepper and cook over low heat for about 25 minutes, until thickened.
  4. ADD the crab and sauté until it thickens again.
  5. Rectify the seasoning.
  6. SERVE accompanied by freshly made tortilla.
