Crab recipe in Chilpachole

Ingredients to make Crabs in Chilpachole:

  • 12 whole crabs
  • 6 tomatoes
  • 1 sprig of epazote
  • 1 stick of cinnamon
  • 6 black peppers
  • 2 cloves
  • 2 dried chipotle chiles, boiled, deveined and without seeds.
  • 3 oil tablespoons
  • 100 gr of dough for tortillas
  • 2 Liters of Chicken Broth
  • 3 garlic cloves
  • 3 basil leaves
  • 3 tablespoons of concentrated broth

How to make Crabs in Chilpachole:

  1. Roast the tomatoes and garlic, then blend them together with the pepper, cloves, cinnamon, and the chipotle peppers.
  2. Fry the mixture in the oil.
  3. Add the crabs, the chicken broth, when the broth breaks, add the dough dissolved in a little water and strain.
  4. Add the epazote and the bouillon concentrate.
  5. Cover and let cook for an hour.
