Ingredients to make Crabs in Chilpachole:
- 12 whole crabs
- 6 tomatoes
- 1 sprig of epazote
- 1 stick of cinnamon
- 6 black peppers
- 2 cloves
- 2 dried chipotle chiles, boiled, deveined and without seeds.
- 3 oil tablespoons
- 100 gr of dough for tortillas
- 2 Liters of Chicken Broth
- 3 garlic cloves
- 3 basil leaves
- 3 tablespoons of concentrated broth
How to make Crabs in Chilpachole:
- Roast the tomatoes and garlic, then blend them together with the pepper, cloves, cinnamon, and the chipotle peppers.
- Fry the mixture in the oil.
- Add the crabs, the chicken broth, when the broth breaks, add the dough dissolved in a little water and strain.
- Add the epazote and the bouillon concentrate.
- Cover and let cook for an hour.
