Ingredients to make Crab Cakes:
- 2 cups of mayonnaise
- 3 minced garlic
- 1 lemon zest
- Juice of 1/2 lemon
- 1 handful of chopped parsley
- 1 handful of chopped dill
- the pancakes
- 2 minced garlic
- 5 whole chopped chives
- 4 Piquillo bell peppers
- 1 handful of parsley
- 1 egg
- ground bread
- Salt and pepper
- 1/2 cup heavy cream or crab dip
- 1/2 pound crab meat or imitation crab
- Ground Parmesan cheese scrambled with some very finely chopped rosemary
How to make Crab Cakes:
- For the mayonnaise, mix all the ingredients very well and put it in the refrigerator.
- In a frying pan, add extra virgin olive oil with a little butter and fry the chopped garlic, chives, parsley and bell peppers.
- Take them out of the pan and put them in a bowl, add the crab meat, the cream or the dip, the breadcrumbs, the parmesan cheese mixed with chopped rosemary, the egg and salt and pepper to taste.
- Stir everything very well and make the pancakes by hand, roll in breadcrumbs and fry in olive oil with butter. They are served with mayonnaise.
