For the mass
• 300 grams of wheat flour
• 500 milliliters of water or chicken broth
• 30 grams of butter
• 1 pinch of salt
For the filling
• 1 shredded chicken breast
• 1 medium onion chopped
• 1 minced garlic clove
• 1 branch of chopped parsley
• Salt and pepper to taste
• 1 tablespoon of oil
To bread
• 1½ cups breadcrumbs
• 1 beaten egg
• 3 tablespoons of water
• 1 pinch of salt
• ½ cup of wheat flour (70 grams)
• 1 liter of oil
How to make Coxinha de frango:
Start the concha de frango recipe by heating the chicken broth in a pot. Next, add the butter to dissolve and a pinch of salt. Before it starts to boil, add the wheat flour all at once and mix vigorously until you form a dough for the concha that comes off the edges of the pot. Then remove from heat and reserve. Sift the flour for a better texture. For the stuffing of the coxinhas, in a pot heat a tablespoon of oil, sauté the finely chopped onion and garlic clove, until they are lightly golden. Add the shredded chicken, season with salt and pepper to taste, cook for 5 minutes. Then add chopped parsley and cook just 2 more minutes and set aside.
Now it’s time to assemble the concha. To do this, take a portion of the dough, stretch it with your hands or with a rolling pin and place it in your hand as a bowl. Fill with the chicken stew and close forming a cone. Then, slightly stretch the tip to give it the thigh shape. Repeat until you finish with your concha dough. To coat the drumsticks, combine the beaten egg with 3 tablespoons of water and a pinch of salt. Separately, prepare a container with ground bread and another with wheat flour. Pass the drumstick through the wheat flour, and then through the beaten egg. Finally, pass it through the ground bread and fry in plenty of oil until golden brown, it will take about 2 minutes or a little less, depending on whether the oil is hot or not. Once fried, you can now serve and enjoy this rich Brazilian dish.
