Ingredients to make covered chicken stew:
- 2 tablespoons of oil
- 700g of chicken breast in small cubes
- salt taste
- 1k of ripe and firm tomatoes, without seeds, in slices, with their juice
- 2 onions, sliced
- 2 bananas peeled in slices
- ½ cup roasted and sliced peeled almonds
How to make Chicken Tap ado Stew:
- Put the almonds in boiling water for 1 minute, remove them and rub them with a cloth to remove the skin, take them to the oven and brown them, then fillet.
- Separately, in a large, thick pot with a tight-fitting lid, heat oil over high heat.
- Add the chicken and sauté until browned on all sides, stirring continuously and sprinkle with salt, not too much.
- Lower the heat and top the chicken with a layer of onion slices, then a layer of tomato slices.
- Sprinkle with the rest of the salt and finish with a layer of sliced bananas.
- Scatter the almonds on top.
- Cover the pot and let it simmer for 20 minutes, taking care not to let it dry out. If necessary, add a little hot water.
- Serve with boiled white rice.
