Covered Chicken Stew Recipe
Ingredients to make covered chicken stew:
- 2 tablespoons of oil
- 700g of chicken breast in small cubes
- salt taste
- 1k of ripe and firm tomatoes, without seeds, in slices, with their juice
- 2 onions, sliced
- 2 bananas peeled in slices
- ½ cup roasted and sliced peeled almonds
How to make Chicken Tap ado Stew:
Put the almonds in boiling water for 1 minute, remove them and rub them with a cloth to remove the skin, take them to the oven and brown them, then fillet.

Separately, in a large, thick pot with a tight-fitting lid, heat oil over high heat.
Add the chicken and sauté until browned on all sides, stirring continuously and sprinkle with salt, not too much.
Lower the heat and top the chicken with a layer of onion slices, then a layer of tomato slices.
Sprinkle with the rest of the salt and finish with a layer of sliced bananas.
Scatter the almonds on top.
Cover the pot and let it simmer for 20 minutes, taking care not to let it dry out. If necessary, add a little hot water.
Serve with boiled white rice.
