Ingredients to make Couscous with chickpeas:
- 400 grams of cooked Chickpeas
- 1 cup of couscous
- 200 grams of long onion
- 200 grams of tomato
- 3 bay leaves
- 2 branches of Thyme
- 1 unit of red bell pepper or paprika
- 1 pinch of garlic paste
- 1 pinch of salt
- 1 pinch of black pepper
How to make Couscous with Chickpeas:
- The first step to make our couscous recipe is to prepare the ingredients.
- First, we are going to make the base sauce of our recipe.
- To go ahead and save time, we recommend cooking the chickpeas in advance.
- To make the sauce, take a deep pot over medium heat, add a little oil and, once hot, add the onion, pepper or paprika and tomato.
- All these products must be well chopped. Let fry until all the ingredients are integrated.
- Add salt, pepper, and a pinch of garlic paste for flavor.
- Once the sauce is ready, add the cooked chickpeas and cover with enough water.
- If you want, you can replace the water with vegetable or chicken broth.
- Let cook over medium heat for 10 minutes and lower the heat.
- Add the couscous and cook with the rest of the ingredients in our recipe.
- Add the bay leaves and thyme to give an extra touch to the preparation and let it simmer for another 10-15 minutes.
- As it cooks you will notice that the preparation becomes thicker and thicker. After cooking time, turn off the heat.
- Serve the couscous recipe with chickpeas adding a little parsley or fresh cilantro on top.
- You can eat it as a single dish or prepare a grilled chicken breast for the second course, tofu burgers or grilled salmon.
