Couscous Risotto Recipe

Ingredients to make Couscous Risotto:

  • 300 grams of Couscous
  • 1 bunch of green asparagus
  • 2 cups of chicken broth or water
  • 1 pinch of garlic paste
  • 150 grams of laminated mushrooms
  • 100 grams of green or long onion finely chopped
  • Parmesan cheese to taste
  • 1 pinch of salt
  • 1 pinch of Pepper

How to make Couscous Risotto:

  1. To start making our couscous risotto recipe, the first step is to prepare all the ingredients.
  2. Bring a pot of water over high heat, once the water is boiling add the asparagus so that they cook for approximately five minutes. Remove from heat and reserve.
  3. In a separate pot add the couscous and cook it with a little salt to make our risotto.
  4. Add a tablespoon of sunflower or olive oil (the one you use for cooking) and fry the green or long onion with the chopped mushrooms and the cut asparagus. Add salt, pepper and garlic paste to taste to increase the flavor of our couscous risotto.
  5. Add the previously cooked couscous, the chicken broth and 1 teaspoon of butter so that our risotto is creamy. Let keep on low heat for 5-10 minutes and turn off the heat.
  6. Serve the couscous risotto, decorating each plate with two green asparagus.
