Couscous and chickpea salad recipe

Ingredients to make Couscous and Chickpea Salad:

  • 1 jar of cooked Chickpeas
  • 1 glass of couscous
  • 8 units of green olives
  • 1 unit of tomato
  • ½ unit of green pepper
  • ½ unit of purple onion
  • 1 splash of olive oil
  • 2 units of Carrot
  • 1 pinch of salt

How to make Couscous and Chickpea Salad:

  1. We gather all the ingredients to make the couscous and chickpea salad
  2. Wash the tomato and chop it into small squares.
  3. Next, we peel the carrot and chop it the same size
  4. Chop the onion and pepper also into fine squares. Add the tomato and carrot.
  5. It is time to add the cooked chickpeas that we have previously washed and drained.
  6. We mix all the ingredients. We also add the chopped pitted olives.
  7. To make the couscous, we put the semolina in a bowl with a pinch of salt and a little olive oil.
  8. We work the couscous with our hands, impregnating the grains with the olive oil.
  9. Meanwhile, we put the same amount of water to cook until it boils.
  10. Once it boils, add the water to the couscous and let it rest for 2 minutes.
  11. After this time, we move the couscous with the help of a fork, to separate the grains. Let stand until cool.
  12. Finally, we add the couscous to the rest of the salad, mix and dress with a little salt and a little olive oil.
  13. You can also add chopped fresh mint.
  14. This couscous and chickpea salad can be prepared at any time of the year, although, due to its freshness, it is usually more typical in the warm months.
