Ingredients to make Corvina in seafood sauce:

  • 6 Corvina fillets
  • ½ cup of boiled mussels
  • ½ cup of snails
  • 2 tablespoons of ground green pepper
  • ½ unit of chopped onion
  • 1 ladle of mussel broth
  • 1 glass of white wine
  • 6 minced garlic cubes
  • ½ cup calamari
  • ½ cup of Octopus
  • ½ cup of Clams
  • 2 tablespoons of flour
  • 1 handful of cornstarch or chuño to taste
  • 1 jet of Oil
  • 1 pinch of salt
  • 1 pinch of Pepper

How to make Corvina in seafood sauce:

  1. As a first step, fry the fillets previously seasoned and passed through flour. The sauce is prepared by first frying the garlic, the two tablespoons of pepper with half a chopped onion, salt and pepper. When this dressing is cooked and even, adds the ladle of brother and a glass of white wine.
  2. If you do not have wine you can put two tablespoons of vinegar.
  3. Let it cook for approximately five minutes. Then add the shellfish previously passed through hot water.
  4. Let boil a while longer until they are at their point. This preparation is thickened with chuño, cornstarch or flour, diluted in a little cold water. Now it’s time to go back to the steaks you already have fried.
  5. Heat them in the oven, and immediately pour the seafood sauce you just prepared. Serve accompanied by boiled potatoes and rice.
