Corvina al canapé recipe

Ingredients to make Corvina al canapé:

  • 5 kilos of sea bass
  • 3 lemon juice
  • 1 pinch of pepper
  • 1 pinch of salt
  • 2 butter spoons
  • 5 egg yolks
  • 6 slices of fried bread-1 tablespoon of flour
  • 400 ml of milk
  • 2 hard-boiled eggs
  • 1 teaspoon paprika
  • 1 tablespoon chopped parsley

How to make Corvina al canapé:

  1. Clean the sea bass and cut it into 6 pieces.
  2. Season them with a third of the lemon, salt and pepper.
  3. Brush the pieces with melted butter and half the egg yolks halfway.
  4. Put them in a roasting pan and cover them with buttered aluminum foil. The sauce put the pieces of sea bass roast with salt, fry the flour with the butter.
  5. When it is incorporated, remove the saucepan from the heat and add the cold milk. Bring to a boil again to form the sauce, stirring it with a wooden spoon.
  6. Add the sea bass juice.
  7. Beat the rest of the egg yolks and add to the sauce without letting it boil.
  8.  Put the roast sea bass and, at the last moment, the rest of the lemon juice. Season and put on the slices of fried bread.
  9. Cover them with the sauce and decorate them with paprika, chopped parsley and hard-boiled eggs.
