- Put a saucepan with water, just enough to cover the spider crab.
- Add a handful of salt (the measure is a handful per kg).
- Deposit the live spider crab with its legs up, leaving it for about 2 hours, until it is dead.
- Place the casserole over low heat and leave it boiling for 10 minutes starting from the moment the bubbles begin.
- The cooking will be done with an uncovered casserole and removing the foam that appears with a strainer.
- When choosing a crab, you have to look at the tips of the nails; if they have hair they are sandy; if they do not have it, they are made of rock.
- These are tastier.
- It is also convenient to look at their guts, being preferable those with black spots to those with red ones.
- Those with a pale color are preferable to those with a stronger hue.
- The ideal size ranges from 1 to 1.2 kg.
