Ingredients to make Cooked with black pudding:
- Half a kilo of chickpeas
- Half a kilo of zancarrón
- One chicken breast, with bone
- 100 grams of streaky bacon or pancetta
- 1 tip of ham
- 1 chorizo for cooked
- 1 onion blood sausage
- 2 cane bones
- 2 carrots
- 1 small onion
- 2 leeks
- 2 turnips
- 6 medium potatoes
- Salt
How to make Cooked with black pudding:
- The night before, soak the chickpeas in warm water.
- The water has to cover them.
- In a very large pot, with a lid, put three liters of water, the zancarrón, the washed and well-cleaned bones, the bacon or bacon and the tip of the ham.
- We put the fire and when it starts to boil, remove the foam that will have formed on the surface.
- We add the chickpeas put in a special net to cook the chickpeas, the breast, the carrots, the onion, the leeks and the turnips, all washed and peeled.
- Cover the pot and let it cook for about 90 minutes.
- At the end of this time, add the peeled and chopped potatoes, the chorizo and the black pudding.
- Season with salt and cook for another 30 minutes. To serve the stew we will follow a special order of service.
- The meats: zancarrón, ham, chorizo and black pudding, chickpeas and vegetables are served in a separate bowl.
- With the strained broth we prepare a soup, calculating more or less 20 grams of fine noodles per person.
- To make a good soup, let the noodles cook for 10 minutes.
