- The first step to make our cooked octopus recipe is to prepare the ingredients.
- While we wash the octopus in cold water to remove sand and clean the meat, bring a pressure cooker to the heat with enough water to cook the octopus.
- The next step depends on how we have purchased the octopus.
- If it comes frozen we must thaw it at room temperature and on the contrary, if we have bought it natural we must give it a few small blows.
- Hitting the octopus before cooking will make the meat tender. We can use a mortar or a special meat hammer.
- The next step is what is known as “scaring the octopus”.
- This consists of introducing the octopus for about 5 to 10 seconds and immediately removing it from the pot with the boiling water.
- This process must be repeated three times, you will see how the tips of the octopus’s tentacles are curling up.
- Once you scare the octopus, you must introduce it into the pressure cooker and bring it to medium heat for approximately 20 to 25 minutes.
- You must be careful with the cooking time to prevent it from going too far. Add a little salt and pepper to the water.
- Once the 20-25 minutes of cooking have passed, drain the octopus and put it under cold water, causing a shock that cuts the cooking.
- This will prevent the octopus from continuing to cook and leaving it with a chewy texture.
- Drain again and that’s it, we already have our cooked octopus.
