Ingredients to make Cooked Octopus:

  • 1 unit of medium Octopus
  • 1 pinch of salt
  • 1 pinch of Pepper
  • 1 unit of Hammer to tenderize meat

How to make Cooked Octopus:

  1. The first step to make our cooked octopus recipe is to prepare the ingredients.
  2. While we wash the octopus in cold water to remove sand and clean the meat, bring a pressure cooker to the heat with enough water to cook the octopus.
  3. The next step depends on how we have purchased the octopus.
  4. If it comes frozen we must thaw it at room temperature and on the contrary, if we have bought it natural we must give it a few small blows.
  5. Hitting the octopus before cooking will make the meat tender. We can use a mortar or a special meat hammer.
  6. The next step is what is known as “scaring the octopus”.
  7. This consists of introducing the octopus for about 5 to 10 seconds and immediately removing it from the pot with the boiling water.
  8. This process must be repeated three times, you will see how the tips of the octopus’s tentacles are curling up.
  9. Once you scare the octopus, you must introduce it into the pressure cooker and bring it to medium heat for approximately 20 to 25 minutes.
  10. You must be careful with the cooking time to prevent it from going too far. Add a little salt and pepper to the water.
  11. Once the 20-25 minutes of cooking have passed, drain the octopus and put it under cold water, causing a shock that cuts the cooking.
  12. This will prevent the octopus from continuing to cook and leaving it with a chewy texture.
  13. Drain again and that’s it, we already have our cooked octopus.
  14. We can eat it just like that with a little hot paprika or we can use it for other delicious recipes such as octopus in vinaigrette or octopus in American sauce
