Cooked Chickpea Salad Recipe

Chickpeas can be used to make an infinite number of dishes, such as a good Rioja-style chickpea dish or the famous chickpea hummus, but these legumes are also the ideal ingredient to make a delicious healthy salad.

The cooked chickpea salad that we show you will also be made with cucumber and asparagus, a fresh and light combination that will make your dish the star of the table.

Ingredients to make Cooked Chickpea Salad:

  • 300 grams of cooked chickpeas
  • 1 unit of Cucumber
  • 2 units of onion
  • 150 grams of Asparagus
  • 1 teaspoon of garlic paste
  • 1 pinch of salt and pepper

  • 2 units of Tomato
  • 1 handful of spinach leaves

How to make Cooked Chickpea Salad:

To start making our cooked chickpea salad recipe, the first step is to pre-list all the ingredients. Remember that the chickpeas must be soaked the night before preparation.

Drain the chickpeas well and put them in the pressure cooker. Add water to cover them along with a little garlic paste, salt and fresh thyme to taste. Cover the pressure cooker very well and cook over medium heat for approximately 20-25 minutes.

While our chickpeas are cooking, we can advance a little in the preparation of our healthy salad. To do this, cut the cucumber and onion into small squares and mix very well in a bowl or salad bowl.

Apart, take a pot with water over medium heat and when it breaks the boil add the asparagus cut into medium pieces with a pinch of salt. Cook the asparagus for approximately 10-15 minutes. Remove them from the water and reserve. Next, mix the asparagus with the reserved onion and cucumber. This will be the base of our cooked chickpea salad. Check that the chickpeas are tender, then drain and allow them to cool to room temperature. Then mix the chickpeas with the rest of the salad. Stir everything so that the ingredients are evenly distributed.

Serve our cooked chickpea salad accompanied by some tomato hulls and if you want some spinach leaves or lettuce to taste.
