Consommé royal recipe

Ingredients to make royal consommé:

  • for 4 people
  • For the consommé:
  • 1/2 kilo of morcillo
  • 2 carrots
  • 1 piece of celery
  • 1/2 kilo of knee bones
  • 2 leeks
  • 1 onion
  • 31 liters of water
  • Also:
  • 1/2 glass of broth
  • 1 egg
  • 2 egg yolks
  • Butter
  • Salt

How to make Royal consommé:

  1. To prepare the consommé we cook half a kilo of zancarrón, another half kilo of knee bones, two carrots, two leeks, a stick of celery, three liters of water and a beautiful onion, toasted on a plate until almost black.
  2. When it breaks the boil we turn it off with a glass of cold water.
  3. It is left on the fire for 5 hours, skimming the broth from time to time, so that it is clear.
  4. Once done, you have to strain it and pass it through a sieve, so that it is completely clean, before degreasing it.
  5. When the consommé is ready, beat a whole egg and two yolks, as if we were going to make an omelet.
  6. They are mixed with a cup of meat and vegetable broth, adjusted with salt and put in a mold greased with butter.
  7. Put the mold in the oven (medium or medium low heat), in a water bath.
  8. It has to set, but without boiling, because then little holes would be made in the flan, and without browning. It takes about 10 minutes.
  9. Once the royal flan has been removed from the oven, the consommé is served and accompanied by the flan so that each person puts the amount they prefer in the consommé.
  10. Tip: The consommé, as with all broths, can be frozen without any problem.
  11. Just let it cool before putting it in glass jars.
  12. Bottles that should never be full, because the liquid expands when it freezes, and the container can burst.
