Consommé recipe with dry sherry

Ingredients to make Consommé with dry sherry:

  • FOR 4 PEOPLE
  • 2 egg, yolks
  • 40 grams toasted almonds
  • 1 glass of dry sherry
  • 250 cc. defatted chicken broth

How to make dry sherry consommé:

  1. Peel the almonds, chop them very fine or grate them. Reserve them.
  2. Put the broth on the fire.
  3. Once it is hot, add the almonds that have been prepared and the egg yolks previously mixed and well beaten with the sherry.
  4. Stir everything with a wire whisk, without letting it boil at any time, as the curdled yolk would remain.
  5. Serve it divided into individual cups
