Ingredients to make Consommé with dry sherry:
- FOR 4 PEOPLE
- 2 egg, yolks
- 40 grams toasted almonds
- 1 glass of dry sherry
- 250 cc. defatted chicken broth
How to make dry sherry consommé:
- Peel the almonds, chop them very fine or grate them. Reserve them.
- Put the broth on the fire.
- Once it is hot, add the almonds that have been prepared and the egg yolks previously mixed and well beaten with the sherry.
- Stir everything with a wire whisk, without letting it boil at any time, as the curdled yolk would remain.
- Serve it divided into individual cups
