Ingredients to make Consommé a la Reina:
- For 4 people:
- 200 grams chickpeas
- ½ chicken
- 200 grams of shank
- 200 grams veal rib
- 1 knee bone
- 4 slices of bread
- 4 egg yolks
- 2 carrots
- 1 onion
- 1 glass of sherry
- 2 tablespoons of cream
- Water
- Hojiblanca extra virgin olive oil
- Salt
- Pepper
- parsley
- cilantro
How to make Consommé a la Reina:
- Boil in a pressure cooker, the water, the chickpeas, the chicken, the bone, the meat and some coriander branches.
- After boiling for a few minutes, deform with the help of a saucepan, close the pot and cook for 10 minutes.
- Uncover the pot and remove the cooked ingredients.
- Clean the meat of any fat it may have and chop it.
- Remove the cilantro sprigs and reserve the broth.
- Chop the onion and carrots and fry them in a pan with oil and a little salt.
- Toast the bread slices in the oven
- Add the minced meat to the poached vegetables in the pan.
- Next, add the chickpeas and heat everything over low heat.
- Put everything in a bowl.
- Strain the broth that we have reserved.
- At serving time, place a yolk in each bowl.
- Add a drop of sherry on each yolk and then gently pour the consommé.
- Accompany each bowl with a slice of toasted bread.
- Serve the consommé together with the source of meat, vegetables and chickpeas.
- Once the chickpeas start cooking, never add cold water or any other element (chorizo, salt, etc.) that lowers the temperature, otherwise they will get hard.
