Confit Cherry Tomatoes Recipe

Ingredients to make Confit Cherry Tomatoes:

• 500 grams of cherry tomatoes

• 1 sprig of fresh rosemary

• 1 sprig of fresh thyme

• 1 branch of fresh basil

• 3 cloves of garlic

• 1 dessert spoon of salt

• 1 teaspoon of sugar

• 1 teaspoon black peppercorns

• 200 milliliters of virgin olive oil

How to make candied cherry tomatoes:

To start candied cherry tomatoes, wash the tomatoes and pat dry. If they are large, cut them in half. Peel the garlic cloves and cut them into three parts each. Wash and dry the aromatic herbs.

Put the cherry tomatoes in a large pot without piling them up. Sprinkle on top with salt and sugar. Add the minced garlic cloves and black peppercorns. Put the herbs on top.

Finally, water everything with the olive oil. Cover with a lid and cook over low heat for about 45 minutes.

Tip: If you want to make the confit tomatoes in the oven, just bake them at 150ºC for 40 minutes.

After the time, uncover and raise the heat one more point, but it should still remain very, very low and cook for 15 more minutes uncovered. Remove from the heat and allow the candied cherry tomatoes to cool completely. Store in a glass jar with a lid and keep it in the fridge. It will last you at least 1 month in perfect condition. If you have leftover oil where they were stored, do not throw it away, it is ideal for dressing your salads and toasts.
