Colombian Tapado Rice Recipe

Ingredients to make Colombian Tapado Rice:

  • 2 cups of cooked rice
  • 1/2 kilo of ground beef
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1 chopped tomato
  • 1/4 cup raisins
  • 5 chopped olives
  • 3 hard-boiled eggs
  • 1 tablespoon chopped parsley

How to make Colombian Tapado Rice:

  1. In a frying pan, fry the onion, garlic, salt, pepper and cumin, cook until the onion is transparent, add the tomato, and stir. Add the ground meat, let it cook trying not to form a bun, add the raisins, olives and chopped hardboiled egg, let it rest for about 15 minutes.
  2. In a Pyrex mold, pour until half of the rice, press well, empty the filling, and cover with the rest of the rice. Press. Back in a fountain. Garnish with chopped parsley
