Colombian Meat Sancocho Recipe

This delicious dish is ideal for Sundays with the family, you can accompany it with small portions of rice, avocado or bananas, remember to use the meats mentioned because these are the ones with the best flavor in their respective races.

Ingredients to make Colombian beef sancocho:

  • 250 grams of breast meat
  • 250 grams of pork shoulder
  • 4 neck bones
  • 4 units of chicken thigh
  • 2 potatoes
  • 1 green banana or plantain
  • 1 cob
  • 1 bunch of coriander
  • 1 pinch of salt

How to make Colombian beef sancocho:

  1. Get the ingredients ready to speed up the sancocho recipe. Remember that this implies cleaning and peeling the vegetables and chopping the meat, as seen in the photo.
  2. In a picador pot, or express pressure cooker, place enough water and add the breast meat chopped into small pieces, the neck bone, the split cob and the hand-chopped banana. Add salt and put on the fire for 40 minutes.
  3. Uncover and add the thighs along with the potato cut into large pieces. Cook again, with the pot whistling, for 10 more minutes.
  4. Finally add the pork meat chopped into small pieces and the cilantro. Let the pot beep for another 10 minutes.
  5. The pork meat is added last so that it does not lose its juices and it does not remain dry.
  6. Uncover and cook over medium heat for 30 more minutes to thicken and mix the flavors. Check the seasoning and correct if necessary.
