Cold Pea Soup Recipe

Ingredients to make Cold Pea Soup:

  • 1/2 kg shelled peas
  • 1/2 endive lettuce(s)
  • 2 shallot(s) minced
  • 1/4 cup cream
  • 1 tablespoon(s) chopped fresh mint (leaves)
  • 1/2 tablespoon(s) margarine
  • 1/2 teaspoon(s) sugar
  • 1 1/2 cup(s) vegetable broth
  • 1/2 lemon(s) its juice
  • Salt and pepper to taste

How to make Cold Pea Soup:

1.Fry the shallots, add the peas, broth, sugar, salt and pepper. Cook covered approximately 20 minutes. Add the lettuce and mint. Cook a couple of minutes. Cool and blend. Add lemon juice and cream. Decorate with a splash of cream.
