Cold Cucumber Soup Recipe

Ingredients to make Cold Cucumber Soup:

  • For 4 people:
  • 400 grams of potatoes
  • 100 grams of butter
  • 2 large cucumbers
  • 1 ½ liters of chicken broth
  • 2 grated onions
  • 1 cup of mayonnaise
  • 1 tablespoon parsley and chopped chives

How to make Cold Cucumber Soup:

  1. Peel the cucumbers and potatoes and cut everything into small pieces.
  2. Heat the butter in a saucepan, sauté the onion, potatoes and cucumber, add the broth and cook until everything is well cooked.
  3. Season.
  4. Grind and go through the Chinese.
  5. Put in the fridge and let cool.
  6. When it is very cold, add the mayonnaise and mix very well.
  7. Serve with a little minced parsley and chopped chives on top and very cold.
