Ingredients to make Cold Cucumber Mint Soup:
- 1/2 kg cucumber(s)
- 1/2 garlic clove(s), pressed
- 5 chives
- 2 cup(s) chicken broth
- 1 plain yogurt
- 1/2 cup(s) cream
- 1/2 lemon(s) its juice
- 5 mint leaf(s)
- Salt and pepper to taste
How to make Cold Cucumber Mint Soup:
- 1Cut the tips of the cucumbers and peel.
- Cut lengthwise and remove the seeds.
- Chop the green and white chives.
- Chop the mint leaves. Blend the cucumbers with the broth.
- Add the yoghurt, cream and lemon juice.
- Blend until creamy.
- Pour into a bowl.
- Add the mint, stir and refrigerate until serving time.
