Cold Consome Recipe

Ingredients to make cold Consome:

  • For 4 people:
  • 1/2 hen
  • 100 grams of zancarrón
  • 1 bone
  • 1 sprig of parsley
  • 2 leeks (white part)
  • 2 carrots
  • 2 spring onions
  • 1 onion
  • 10 sheets of neutral gelatin
  • 3 liters of water
  • Salt
  • 2 boiled eggs

How to make cold Consome:

  1. Clean the chicken and the vegetables and chop everything except the onion.
  2. Put it in a saucepan with water and salt over low heat
  3. Cut the peeled onion into three slices and gratin them until golden brown.
  4. Add them to the broth to give it a dark color.
  5. Let it reduce over low heat for an hour or an hour and a half, until there is about 1 liter and a half left.
  6. Strain the broth without clouding it, reserving the chicken and the zancarrón.
  7. When it is warm, add the gelatin.
  8. Let it chill in the fridge for about two hours.
  9. Chop the already hard broth and serve it in cups or plates accompanied by chopped hard-boiled egg and chopped chicken and zancarrón.
  10. You can also drink this broth hot.
