Cold Cauliflower Salad Recipe

Ingredients to make Cold Cauliflower Salad:

  • 1 cauliflower
  • 2 carrots
  • 1 purple onion
  • 4 tablespoons of mayonnaise
  • chopped parsley
  • black pepper
  • Salt

For the mayonnaise

  • 1 egg
  • 1 splash of olive oil

How to make Cold Cauliflower Salad:

Wash the cauliflower, separate it into small trees and cut them to obtain smaller pieces.  Apart, peel the carrots and cut them to your liking. Of course, try to make pieces of a similar size to those of cauliflower. Cook the cauliflower and carrot in a pot of boiling water for 5-10 minutes, depending on how done you want them to be. If you prefer to make the cauliflower salad raw, you can too! In this case, you can skip this step. Tip: We recommend using red onion because it is one of the softest varieties of onion, ideal to consume raw.

To prepare this salad, we recommend adding: cauliflower washed and chopped two cans of raw tuna (no oil if we are looking for a light option), a chopped tomato, and a peeled and chopped carrot, well-washed lettuce and chopped green pepper. Once all the ingredients are ready, mix and dress the cauliflower and tuna salad with a drizzle of olive oil or sugar-free soy sauce.

Cauliflower and potato salad

The cauliflower and carrot salad that we have shared is low in carbohydrates, so including potatoes is more than recommended if we are not going to eat carbohydrates in another way. Carbohydrates are essential to keep us healthy, so they should always be present in our diet, whether or not to lose weight.

To make this salad we must cook the potatoes or cook them in the microwave, let them cool and mix them with the raw or cooked cauliflower and the vegetables that we like the most.

Cold cauliflower salad for diet

Given that mayonnaise contains a considerable amount of oil, if we are looking for a diet cauliflower salad recipe, it would be better to do without this ingredient. As an alternative, we recommend dressing the salad with olive oil (maximum two tablespoons per person) or with sugar-free soy sauce, which will also add extra flavor to the dish.
