Cold Beetroot and Apple Soup Recipe

  • 1 unit of Beetroot
  • 1 unit of green apple
  • 1 unit of Onion
  • 600 milliliters of vegetable broth
  • 1 pinch of salt
  • 1 unit of Greek yogurt
  • 1 handful of fresh chives

How to make Cold Beet Apple Soup:

  1. We gather all the ingredients to make the cold beet and apple soup.
  2. In a pot, fry the onion cut into julienne strips and add a little salt. Let it cook over medium heat for a couple of minutes.
  3. Add the peeled and diced apple. Let it cook for a couple more minutes.
  4. Add the diced beets, season with salt and pepper and let the flavors mingle. We have used cooked beetroot, but you can also use natural beetroot and cook it separately until it is tender.
  5. Add the vegetable broth and let the beetroot soup boil for 10 minutes.
