Cold Apple Soup Recipe

Ingredients to make Cold Apple Soup:

  • For 4 people:
  • 4 medium Golden apples, peeled, cored, and quartered
  • 1 cup of dry or sweet white wine (according to your taste)
  • 1 cup of apple juice
  • 2 tablespoons of sugar
  • 1 cinnamon stick
  • 3 slices of ginger
  • 2 cups of beef stock
  • 1/2 cup of sour cream or milk jocoque
  • 12 slices of chopped chives.

How to make Cold Apple Soup:

  1. In a suitable container, put the apples with the white wine and apple juice, as well as the sugar, cinnamon and ginger over medium heat.
  2. When the apple is soft, remove the portion of cinnamon and ginger.
  3. Then blend the apple mixture with the beef stock and the sour cream, and let it cool.
  4. Serve in individual portions garnishing each plate with chives.
