Panellets are traditional sweets from All Saints Day, the typical ones are those made with pine nuts, but currently they are also made in many flavors. Likewise, we can find them made of chocolate, strawberry, coconut, coffee, among other ingredients. On this occasion, we propose some simple ones to prepare at home, they are very good and are cheaper. The base for all of them is the same, a marzipan dough with almond flour and sugar, all that remains is to provide the flavor that we like and coat them with some dried fruit or icing sugar.

Ingredients to make Coffee Panellets:
- 150 grams of almond flour
- 100 grams of sugar (½ cup)
- 1 egg white
- 1 espresso coffee
- 4 tablespoons of icing sugar
How to make Coffee Panellets:
- To start with the coffee panellets recipe, first in a bowl add the almond flour, the sugar and the egg white. Knead well so that the ingredients are mixed.
- Prepare a strong coffee or espresso and add it. Then keep mixing well.
- Knead the dough well with your hands so that all the ingredients are integrated and the almonds release their fat.
- Next, form a roll or a ball, wrap it in a sheet of transparent film and put it in the fridge
- Tip: if you do not have this time, you can leave it for a minimum of 2-3 hours so that the dough is compact.
- Put the oven to heat up to 200 ºCwith heat up and down. Next, when you go to prepare the coffee panellets, acquire pieces of dough, make balls with the dough and end up giving the shape of a croquette.
- Using the back of a silverware, make an indentation in the center to resemble a coffee bean.
- Tip: if you wish, you can also make the panellets in a round shape and make them traditional.
- Place a plate with the icing sugar and then prepare a baking tray.
- Next, pass the coffee sweets through the icing sugar and place on the baking tray.
- Place the tray in the center of the oven and leave it for about 10 minutes or until we see that the coffee cakes are cooked, being careful not to burn them.
- Then remove and let cool well. They will be ready to eat!
