Cod with spinach recipe

This cod with spinach recipe is a traditional dish that, although it is usually made during Lent or Easter, is also consumed throughout the year. It is not surprising; because it is an excellent, very nutritious and delicious combination that we can always turn to when a fish dish provokes us during lunch.

Cod is a white fish with very good protein and low in fat. To make this recipe, we have used salted cod and we have soaked it in salted water. However, you can also prepare it with cod soaked in its point of salt. Both the fish and the spinach need little cooking time, so we will have this dish ready in no time. Let’s not waste any more time, so keep reading and discover how to make cod with spinach.

Ingredients to make Cod with spinach:

  • 2 pieces of cod loin
  • 1 bag of spinach
  • 1 handful of pine nuts
  • 1 handful of raisins
  • 50 grams of grated cheese
  • 1 onion
  • 4 tablespoons flour
  • 1 pinch of salt
  • 1 splash of olive oil

How to make Cod with spinach:

  1. To start with this cod with spinach, raisins and pine nuts, soak the cod for 48 hours and change the water every 6-8 hours. Wash the spinach and cut the onion into strips.
  2. Put a frying pan over medium heat with a splash of oil. When it is hot, add the onion, let it poach and take on a little color.
  3. When you see that the onion is golden, add the washed spinach. Although they look like a lot of spinach, they dwindle quickly
  4. Prepare a few pine nuts and raisins. You can soak the raisins to hydrate them or leave them dry. If you put them to soak, you can also do it with a little brandy that will evaporate during cooking.
  5. Add the pine nuts and raisins together with the spinach and onion, sauté everything together for a few minutes.
  6. Put the flour on a plate to coat the cod pieces.
  7. Pour a good stream of olive oil into a pan and, when hot, add the cod pieces to brown them.
  8. On a baking tray or in individual ovenproof dishes, place a base of spinach, a piece of cod and cover everything with grated cheese. Put in the oven to gratin at 200 °C and, when golden, take it out. Your cod with spinach will be ready to serve. Enjoy!
