Cod with ratatouille recipe

Ingredients to make Cod with ratatouille:

  • 400 grams of salted or fresh cod
  • 3 young garlic
  • 1 spring onion
  • ½ eggplant
  • ½ red bell pepper
  • 2 tomatoes
  • 1 pinch of salt
  • 1 pinch of rosemary
  • 1 splash of olive oil
  • 2 cayenne
  • 1 pinch of sweet or hot paprika

How to make code with ratatouille:

  1. Chop the spring onion and spring garlic into medium pieces and cook them for 4 minutes in a saucepan or pot with a drizzle of olive oil.
  2. To prepare the recipe more quickly, you can also make the cod with ratatouille from a boat. In this case, go directly to step 4.
  3. Trick: you can use 2 or 3 garlic cloves instead of the spring garlic.
  4. Add the red pepper and the aubergine, both previously washed and cut. Stir well and season to your liking. Cook for 4 or 5 more minutes.
  5. Tip: if you use desalted cod, we advise you not to add too much salt in this process, as it tends to have a stronger flavor.
  6. Peel the tomatoes and cut them into tiny cubes. Add a teaspoon of sweet or hot paprika to the saucepan, cook for a few seconds and then add the tomato. Let it fly over low heat for 10 minutes and stir from time to time.
  7. Trick: you can use natural crushed tomato if you wish.
  8. On a baking tray, place the cod fillets and add a drizzle of olive oil, the rosemary leaves and the two cayenne peppers. Bake the fish for 12 to 15 minutes at 180ºC. You could also make the cod with ratatouille in the oven by adding the vegetables to the tray.
  9. Tip: you can flour the fish and fry it instead of baking it. You will give a touch of flavor to the dish.
  10. Remove the cayenne peppers from the fish and prepare the plating. Arrange the vegetables on the base of the plate in a circle and place the cod on top. Sprinkle a little paprika and the cod with ratatouille recipe will be ready!
  11. Tip: if you want, you can sprinkle some grated cheese or add a layer of aioli on the fish, cook in the oven for a few minutes and serve the cod with ratatouille gratin.
