  • 4 fresh cod fillets without bones
  • 8 portobello mushrooms
  • 2 dessert spoons of cornmeal
  • 2 pinches of salt
  • 1 small glass of white wine
  • 1 glass of water
  • 1 splash of extra virgin olive oil
  • 1 pinch of tarragon
  • 1 pinch of thyme
  • ½ leek

How to make Cod with mushrooms:

  1. Wash and slice the mushrooms. Also wash the leek and cut it into thick slices. On the other hand, try to make the cod fresh, but if you only have frozen you should let it thaw completely before starting to prepare the recipe.
  2. Tip: Check the saltiness of the cod because if it is already salty it will not be necessary to add more salt.
  3. Pour a splash of olive oil into a pot and put it on the fire. When hot, fry the leek for 2 minutes, then add the mushrooms, stir and cook for 3 minutes.
  4. Pour in the wine and allow the alcohol to reduce for 2 minutes. If you don’t want to use wine to cook the cod with mushrooms, you can substitute it for water with a stock cube or fish stock.
  5. Mix the cornmeal with the water until well diluted. Then, add this mixture to the casserole and add a little more water if you see it as necessary, keeping in mind that the sauce should be light and not too thick.
  6. When it starts to boil adds the spices and a point of salt, but remember that if the cod is salty it is not necessary. Stir and let it boil again, have it over medium heat for 3 minutes. If you used a stock cube, you should not add more salt.
