  • 300 milliliters of white wine

How to make cod with chorizo peppers:

  1. Before getting down working with this cod recipe, it should be noted that we will only use the chorizo peppers. The pepper paste is indicated for those people who prefer this product instead of whole peppers.
  2. We start by hydrating the chorizo peppers in a bowl with warm water for two hours. Remember that if you prefer chorizo peppers paste, you can skip this step.
  3. Separately, we peel the potatoes, wash them and cut them into slices. Then, we cut the onion and fillet the already peeled garlic.
  4. We take a baking dish and place a bed of potatoes, onions and garlic. Add salt and pepper to taste and a splash of oil.
  5. After the hours of hydration of the peppers, we drain them and taking care not to catch the skin, we scratch them to beat the extracted meat with the white wine. If you use the chorizo pepper paste, mix it with the wine.
  6. Of the previous mixture obtained, we pour 200 ml on the bed of potatoes and onion. You will see that this juice will add a lot of flavor to the cod with potatoes. Preheat the oven to 200ºC.
  7. We put the dish in the oven and bake for approximately 50 minutes, or until we see that the potatoes are tender.
  8. After the time has elapsed, we place the cod fillets on the bed of potatoes and onions; pour over them the rest of the mixture of white wine and chorizo peppers. Bake the cod for 15-18 minutes, or until we see that it is well done.
  9. Clever! We serve the cod with freshly made chorizo peppers to enjoy it warm.
