Cod with Chickpeas Recipe

Chickpea stew with cod is a typical dish for the dates of Holy Week, especially in Spain, where it is very famous. Although this Easter recipe is well known, the cod with chickpeas dish has many variations and the one we bring you today is one with homemade flavor and spinach.

Ingredients to make Cod with chickpeas:

  • 600 grams of Chickpeas
  • 400 grams of Cod
  • 500 grams of Spinach
  • 1 unit of Onion
  • 2 units of Potato
  • 1 slice of bread
  • 2 bay leaves
  • 1 clove garlic
  • 1 tablespoon parsley
  • 1 jet of oil
  • 1 pinch of salt
  • 2 units of boiled egg

How to make Cod with Chickpeas:

1 To make this delicious chickpea stew, the first thing we must do is prepare the ingredients. Let the fish soak in enough cold water for at least 24 hours, changing the water about three times. Chickpeas should also be soaked the day before preparation.

2 The next day, cook the grains with water. Salt, laurel and a splash of oil. Let cook, watching the amount of water (they must always be covered), until they are tender.

3 Separately, heat a frying pan with oil and fry the bread and the clove of garlic separately until golden brown and set aside. Continue using the same pan with oil and fry the finely chopped onion and when it is well fried add a little paprika and stir well.

4 Add this sauce to the chickpeas and when they are almost cooked also add the cod to the cooking. The fish must be chopped and boneless.

5 Apart, discard the spinach stems and pass them through boiling water for a few minutes. This process is called blanching. Then pass them through cold water and strain until they cool to chop them and add them to the chickpeas.

6 Crush the slice of bread together with the garlic, previously fried. You can help yourself with a mortar, then add a little of the chickpea broth, parsley, the egg yolks and mash well. Pour the result into the pot of chickpeas and cook over low heat. Correct the seasoning if necessary.

7 Lastly, add the chopped potatoes to the cooker about 5 minutes before serving, since the potato cooks very quickly. Let the chickpeas with cod rest for a few minutes and that’s it.

8 Serve the cod stew with chickpeas decorating with the white part of the boiled eggs and enjoy!
