How to make Cod Repápalos in sauce:

  1. In order to make the repápalos dough, it is necessary to soak the cod the day before and change the water twice to desalt it. Once desalted, the next day, we crumble it and reserve a moment.
  2. Then, we put the bread in the milk and make a not very soft paste. Separately, we crush the garlic, parsley and peppercorns in the mortar to make a mash. Then, we take a bowl and mix the cod, the bread mixture, the matador and the eggs in it to form the repápalos dough.
  3. To continue with the recipe for pickled cod repápalos, take a frying pan and heat enough olive oil to fry the diced potatoes and the rappels. To cook the repápalos, we take two tablespoons, take portions of dough and introduce it into the hot oil. It is not necessary that all the repápalos come out the same, as they are they will be delicious!
  4. The cod repápalos should be well browned. As they cook, we remove them. In total, I got 16.
  5. To make the marinade that will accompany the cod repápalos, pour the oil left over from the previous step into a saucepan, chop the onion into julienne strips and fry it until golden brown, together with the bay leaf and a tablespoon of flour.
  6. Pour the vinegar and immediately afterwards the water and the coloring. Let the sauce cook for five minutes. After this time, we incorporated the repápalos and tasted salt. If we want the cod repápalos in sauce to have a stronger flavor, we can add a fish stock cube.
  7. Trick: The fire should not be very strong.
  8. After five minutes after adding the repápalos, we put the saucepan aside. Serve the potatoes, place the croquettes on top and pour the broth. Clever! Now we can enjoy these delicious cod repápalos in sauce, a traditional Spanish recipe with a lot of flavor.
