Cod recipe with fried tomato from the boat

Traditional recipe where they exist, cod with tomato is one of those dishes of Spanish gastronomy that you have all eaten on occasion. Made with simple ingredients but with an unbeatable flavor, it is also not a complicated preparation and the satisfaction of presenting it on the table makes up for the time that must be dedicated to it. We make the recipe that we are sharing with crushed canned tomatoes, because it is good to have some preserves at home that can get us out of trouble, but if you have natural tomatoes it will always be the best alternative, since cooking with seasonal products is noticeable in the taste of our recipes.

Ingredients to make Cod with fried tomato from the boat:

  • 2 salt cod fillets (large)
  • 1 can of fried boat tomato (800 grams)
  • 1 onion
  • 1 splash of extra virgin olive oil
  • 1 fish stock cube
  • 1 teaspoon smoked sweet paprika
  • 2 garlic cloves
  • 1 splash of white wine

How to make Cod with fried tomato from the boat:

  1. To prepare cod with fried tomato from the boat you must start by peeling and chopping the onion. In a frying pan add a trickle of extra virgin olive oil, bring it to the heat and add the chopped onion, stir well and fry it.
  2. Peel the garlic cloves, chop them and add them to the pan with the onion.
  3. When the onion begins to soften, add the shredded fish stock cube, the smoked paprika and a splash of white wine. Stir well and let cook for a few minutes.
  4. Add the fried tomato from the boat, mix and cook over medium-low heat, stirring frequently until the onion is very tender.
  5. Trick: if you prefer you can use grated natural tomatoes for yourself. Having a can of preserves at home is a great help when it comes to cooking, but cooking with fresh products is undoubtedly the best option.
  6. Taste and rectify the salt if necessary, add the cod fillets. In our case, we have cut them in half because it is easier to serve smaller pieces, thus preventing them from breaking when removing them.
  7. Cover the pan and let the cod with tomato cook over low heat for about 15 or 20 minutes (depending on the thickness of our fish fillets), or until the cod is done.
  8. Remove from the heat and serve the cod with tomato accompanied by a lot of bread to dip in this delicious homemade sauce.
