  • 1 onion
  • 1 cayenne (optional)
  • 600 grams of crushed tomato
  • 2 bay leaves
  • 1 glass of water or fish brother
  • 2 garlic cloves
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 splash of olive oil

How to make Cod Migas:

  1. Before starting with the cod crumbs recipe, if you have chosen to desalt the fish at home.
  2. Chop the garlic cloves and cut the onion into strips, although if you prefer you can also chop the onion.
  3. Put a casserole over medium heat with a drizzle of olive oil, add the cayenne pepper and followed by the chopped onion. Let the onion poach and, halfway through cooking, add the minced garlic cloves. Let it cook until it is all poached, being careful not to burn the garlic.
  4. The cayenne is optional, the cod crumbs can also be made without it, but this will add a really delicious spiciness to the sauce. Likewise, if you like it spicier, add 2 cayenne peppers and you will have a very good hot sauce.
  5. Add the crushed tomato and bay leaves. Let the tomato cook for about 15 minutes over low heat. Add a little salt and pepper.
  6. While the sauce is cooking, prepare the cod, which you will already have salted. So, remove the skin from the fish and the bones. Then cut it into strips.
  7. When the tomato sauce is ready and has thickened, add a little water or fish broth and stir. Taste for salt and rectify if necessary, but keep in mind that the fish will already add salt. Prepare your own broth with this simple Fish Broth Recipe.
  8. When you see that the sauce is ready, add the cod pieces and mix. Cover the pot and let cook for 10 minutes. Go moving the casserole so that the flavors mix well.
  9. Once this time has passed, turn off the heat and let it rest for a few minutes before serving. If you decide to cook the cod migas in advance, we recommend adding the fish but not cooking it until lunchtime, so it will be just right. Serve the dishes and accompany the recipe with a good piece of loaf bread.
