- 6 large garlic cloves
- 1 splash of extra virgin olive oil
- 1 pinch of black pepper
- 1 pinch of salt
How to make cod confit with garlic:
- Three before cooking the cod, we desalted it. To do this, we put the pieces with the skin up in a large bowl and fill it with water. Cover it and put it in the fridge. We change the water twice a day. If they are very thick pieces, we should still change the water three times a day and if they are smaller we will have to change the water for two days.
- When we go to prepare it, we peel the garlic cloves and cut them into thick slices. In a pan we put a finger of olive oil and put it on the fire. When hot, add the garlic and cook until golden. We withdraw and reserve.
- We wait for the oil to have cooled down, return to the heat at a very low intensity and add the salted and drained pieces of cod. We let it cook at a very low temperature and we turn it from time to time so that it is done on both sides.
- When it is almost done, add a pinch of ground black pepper on top and rectify the recipe for cod confit with garlic salt if we consider it necessary.
- When they are done, remove the cod pieces and put them on a plate. On top we add the fried garlic.
