Preparing the confit cod is very easy. It is about cooking it in oil at a very low temperature, between 70 and 80ºC. Simple and fast, and it is really tasty. Learn how to prepare it through a few simple steps.

Ingredients to make cod confit:

  • 2 units of salted cod loins
  • ½ liter of Oil
  • 1 clove garlic
  • 1 unit of Chili

How to make code confit:

  1. Prepare the ingredients to cook the cod confit. We have bought the cod loins directly salted; otherwise, they will have to be desalted in advance. The oil should preferably be extra virgin olive oil, because it will be juicier and healthier.
  2. Peel the garlic clove and put it on the fire in a saucepan with plenty of oil. This will have to cover the cod loins completely, so if necessary we add more.
  3. When the garlic is already golden, add the chili and lower the heat to a minimum. We will use a kitchen thermometer to control the temperature of the oil. You have to wait until it is at 80ºC. Then we introduce the code -which will be somewhat cold from the fridge, and the temperature will drop to 70ºC. The cod will cook slowly at this temperature for 10-15 minutes, depending on how thick the fillets are. If the temperature rises too much, we can also turn off the heat directly and leave the cod for a little longer if necessary.
  4. After this time, the confit cod is ready to serve. We can accompany it with some boiled potatoes with Serrano ham shavings, and a dry white wine is ideal to drink.
